Cheesy, Spicy Black Bean Bake
Smoky, cumin-spiced black beans baked under a blanket of melted Cheddar -- like the best chili, but in a fraction of the time.
Ingredients
Serves 4- 3 tbspextra-virgin olive oil
- 5garlic cloves, peeled and sliced
- ¼ cuptomato paste
- 1 ½ tspsmoked paprika
- ¼ tspred-pepper flakes
- 1 tspground cumin
- 2 cansblack beans, drained and rinsed
- ½ cupboiling water
- Kosher salt and black pepper
- 1 ½ cupsgrated Cheddar or Manchego (from about a 6-oz block)

Heat oven to 475 degrees. In a 10-inch ovenproof skillet, heat olive oil over medium-high. Fry garlic until lightly golden, about 1 minute. Stir in tomato paste, paprika, red-pepper flakes, and cumin; fry 30 seconds, reducing heat as needed to prevent burning.

Add beans, water, and generous pinches of salt and pepper; stir to combine. Sprinkle cheese evenly over top, then bake until cheese is melted, 5 to 10 minutes. Broil 1 to 2 minutes if you want more browning. Serve immediately.
