Healthy Nectarine Crumble

A lighter take on the classic crumble. Naturally sweet nectarines with an oat, nut, and seed topping. High fiber, low added sugar, genuinely satisfying.

  • 8 mediumnectarines, sliced (skins on)
  • 1 tbsplemon juice
  • 1 tspvanilla extract
  • 1 tspcinnamon
  • 1 tbsparrowroot or cornstarch
  • 1-2 tbsp maple syrup (only if fruit is not very ripe)
  • 2 tbspchia seeds
  • ¾ cuprolled oats
  • ¼ cupquick-cooking steel-cut oats
  • ¼ cupalmond flour
  • ½ cupchopped walnuts and pecans (mixed)
  • 2 tbspground flaxseed
  • 2 tbsphemp hearts
  • 1 tspcinnamon
  • of salt
  • 3 tbspcoconut oil or butter, melted
  • 2 tbspmaple syrup

Method

    Preheat oven to 375F.

    Toss sliced nectarines with lemon juice, vanilla, cinnamon, arrowroot, chia seeds, and maple syrup (if using). Pour into an 8x8 or 9x9 baking dish.

    Mix all topping ingredients together until clumpy and well combined.

    Spread topping evenly over the fruit.

    Bake 35-40 minutes until the topping is golden and the fruit is bubbling at the edges.

    Cool 10 minutes before serving.
